Preparation:

place The Stock In A Pan With Beef Mince And Leave To Soak For One Hour. Add The Tomatoes, Carrots, Onion, Bouquet Garni, Unbeaten Eggs Whites, Crushed Shells And Plenty Of Seasoning, Whisk Until Nearly Boiling Then Bring To Boil. Simmer Very Gently For One Hour. Pour Through A Jelly Bag Or Scalded Cloth, Return To The Pan, Adjusting The Seasoning If Necessary.
