What is Chiffonade?
Chiffonade — Thin strips or shreds of vegetables (classically, sorrel and lettuce), either lightly sautéed or used raw to garnish soups. With lettuce, the aim is to cut it as thinly as possible so you end up with delicate, frilly ribbons.
