The white boneless flesh from the fillets is firm and flavoursome and can be cooked in a variety of ways, including grilling, sautéing and poaching. It’s popular with chefs because it goes well with a wide variety of ingredients and flavourings. The bones from its head make an excellent stock. If you like sole and turbot then you’ll like John Dory.
