What is Sardine?
Sardine — Sardines are baby pilchards. They're an oil-rich fish, usually sold whole, whether fresh, frozen or tinned. Bought fresh and whole, sardines are ideal fish for grilling and barbecuing. Cook them until the skin is crisp and charred and the flesh comes away from the bone easily. They go well with robust tomato sauces to counteract the oiliness of the fish, or dressed with lemon and fresh herbs and…

It's worth paying a premium for good-quality tinned sardines. Those from Portugal, Spain and France are particularly good.
