What is Charlotte?

Charlotte — 1. Small, waxy potato with a pale yellow skin and buttery yellow flesh. Excellent in salads, eaten hot or cold, and in Spanish omelettes. Also good for boiling, pan-frying and using in gratins. 2. A pudding made in a mould lined with sponge fingers or bread slices. Apple charlotte is probably the best-known example. Charlottes can be baked or unbaked.
