Lemon sole is actually a flounder (the family that includes plaice and turbot) and not a sole fish at all, even though it's frequently compared to Dover sole. It's widely available and can be bought as fillets or whole.

It has delicate, sweet white flesh and is best cooked simply, either grilled or fried and served with a light sauce. The fillets can be rolled around a stuffing and steamed or baked and it goes well with the lighter flavours of Asian cooking such as lemon, spring onions and ginger.
