What is Ceviche?
Ceviche — A South American dish of raw white fish, marinated and effectively 'cooked' in lemon or lime juice - the acid in the juices breaks down the fish and after a few hours it will eventually become opaque like ordinary cooked fish. It's typically served with sweet limes, raw onion rings, tomatoes and boiled sweet corn.
